This results in a significantly different wine to the rest of Colorado viticultural scene. Purgatory Cellars makes and ages wine in amphora containers, the practice going back 5,000 years to ancient Greek and Roman history. The amphorae are made in the country of Georgia from special clay. It is infused with beeswax and then baked in a wood-fired kiln. This technique provides unique flavors and characteristics different from any other aging method. Purgatory Cellars make about 3,000 liters per year of at least five varietals.
