Aqui Cal-Mex is a regional Santa Clara Valley restaurant chain that focuses on natural, wild, and organic menu selections with Baja, Asian, and Latin American influences. The chain was founded in 1994 by executive chef Rob Francis, the former head chef at Eulipa, and fast food entrepreneur David O'Mara, who strived to create a new type of fast-casual restaurant focused on healthy, globally-influenced experimental dishes. Today, the chain operates locations in Willow Glen, Cupertino, Blossom Valley, and Campbell, serving signature and seasonal items such as Sonoma goat cheese quesadillas, Thai chicken burritos, and free-range chicken enchiladas. A wide variety of alcoholic beverages are also served, including the chain's trademark Industrial Strength margaritas and cocktails.
