The Herbfarm Restaurant is an American restaurant located outside Seattle that focuses entirely on serving regional foods from local sources in a limited region. The restaurant is a member of an international movement to preserve artisanal food known as Slow Food and epitomizes the farm-to-table movement. Co-owned by husband and wife team Carrie Van Dyck and Ron Zimmerman, the restaurant serves fixed-price, nine-course menus which are prepared using locally sourced ingredients, many of them from their kitchen gardens and nearby farm. The cuisine is paired with local wine and served at a rural culinary retreat attached to an inn where guests can relax in a warm and welcoming atmosphere. The Herbfarm Restaurant is open for lunch Monday through Sunday and dinner only Thursday through Sunday.
