West Texas Barbeque Co. is a rustic, no-frills spot where folks in Jackson, Michigan go when they feel for authentic Texas barbecue. West Texas started in 1985 on a street corner and grew into one of the best barbeque joints in Michigan. The counter-serve joint was modeled after some of the authentic BBQ Joints in Texas. The tables are mix and match and the chairs came out of a going-out-of business Mexican restaurant. There are only twenty-four seats in the "dining room" and thirty-two more outside on the picnic tables, when the weather permits. What brings folks in is not the décor or the scenic view of the gravel parking lot but the tantalizing smell of smoked and grilled meats. The barbeque pits are fired using seasoned oak and hickory, and the meats are cooked slowly until each brisket, sausage or rib is cooked to perfection.
