Chef Massimiliano Villani returned to his native Sardinia after gaining experience abroad. He opened this gourmet restaurant in downtown Olbia on the northeastern coast, L'Essenza Bistrot.

Each morning he visits the fishmongers, grocers and markets to source fresh ingredients. After determining the menu for the day, it is written on the blackboards.

No two days are the same. An intimate setting has been created with small tables and private rooms for parties. Customized catering is offered and can be delivered to villas, yachts or the beach. Chef Villani also conducts cooking classes from time to time.
