Tolon is an industrial-chic American eatery that offers an upscale farm-to-fork dining experience. The small, independent family-run restaurant specializes in serving seasonal, market-driven cuisine prepared with the freshest, highest quality locally, and regionally sourced ingredients. Chef Matthew Nolot creates signature dishes like roasted bone marrow, Faroe Island salmon, scallops, steak and potatoes, and bison sirloin steak, and the food is accompanied by fine wines from around the world, which can be enjoyed by the glass or bottle, craft beers on tap or by the bottle, and handcrafted cocktails. Tolon is open for dinner Tuesday through Saturday and lunch on the weekends.
