Casa Chimayo is one of Santa Fe's premiere Mexican restaurants, gaining national notoriety for its feature on the popular Food Network series Diners, Drive-ins, and Dives. The restaurant, which was opened in 2011 by Don Timoteo, serves up traditional New Mexican cuisine, blending elements of Spanish and indigenous American cooking and traditions into a unique culinary experience found nowhere else in the world. Diners can enjoy scrumptious entrees at dinner, including favorites such as pollo en mole rojo, plato de truchas, el comanchero ribeye, and carne adovada.
