Sazon is a contemporary Mexican restaurant in Santa Fe, helmed by executive chef Fernando Olea, a staple on the city's culinary scene since the early 1990s. The restaurant, which was opened to the public in 2015, is best known for its delicious New Mexican mole dish, a recipe originally crafted in celebration of the City of Santa Fe's 400th anniversary in 2009. Dinner service is offered Mondays through Saturdays, showcasing high-quality entrees such as stuffed peppers or berenjena eggplant, shrimp enchiladas, and black pepper-encrusted Angus beef tenderloins prepared with snow peas and red cabbage. Specialty small plates include Mexican specialties such as corn truffle huitlacoche, yellowfin crudite, and miniature corn, beet, and spinach cakes prepared with mandarin habaƱero foam and chili poblano sauce. Diners can also enjoy a nine-course chef's selection DegustaciĆ³n tasting menu twice nightly, with mezcal, tequila, and wine pairings available for an additional fee.
