Ginger and Baker renovates Fort Collins' historic turn-of-the-century mill facility into a multi-purpose dining compex and community gathering space, originally opened by Colorado State University athletic director Ginger Graham and her husband, Senate candidate Jack Graham. The charming mill facility, which is listed on the National Register of Historic Places, has been a major community gathering spot for more than a century, originally serving as a major feed and supply center for the region's early pioneers. The facility has been restored to its original architectural splendor and now offers excellent Colorado-style dining at its full-service Cache restaurant, which serves up high-quality locally-sourced bison, beef, and seafood entrees at dinner. Cocktails and small plates are served up at the Rooftop, which offers cozy fireplace ambiance and large-screen televisions. Other attractions include a farm-to-fork cafe, a market and bakery space, and an instructional kitchen offering cooking and cocktail courses.
