The hotel’s restaurant, Cobalt, serves fresh seafood with ocean views and a variety of seating options, including the casual yet elegant dining room, the lounge, the open air patio, and poolside dining at Heaton’s Reef Bar & Grill, which also offers live music on certain afternoons and evenings. Cobalt also shares a stretch of beach with indigenous sea turtles – the hotel’s concierge can advise on the best times to watch the hatchling’s return to the sea.

Open for breakfast, lunch, and dinner, Cobalt’s menu selections include Oyster on the Half Shell with cocktail sauce, fresh horseradish, and lemon; Escolar Ceviche with scallions, cucumber, red onion, cilantro, blood orange, and tomatoes served with a wonton crisp; Osceola Farm Greens with candied walnuts, figs, red radish, and buttermilk blue served with a sherry vinaigrette; Creekstone’s Beef Capaccio with white truffle oil, aged parmesan, and lemon arugula; Bacon Wrapped Dates, with Boursin cheese and a red wine gastrique; Grilled Tuna marinated in oolong with quinoa and a napa cabbage slaw served with ginger dressing; Seared Scallops with saffron risotto; Brick Chicken; Jack Daniels Cake with a bourbon butter glaze served with cola ice cream; Key Lime Sundae with key lime gelato, whipped cream, and brown butter served with a white chocolate macadamia nut cookie; and Cinnamon Panna Cotta served with warm caramel and a Fall fruit compote consisting of apples, cranberries, and apricots.

The menu at Heaton’s Reef Bar & Grill includes Truffle Fries with garlic aioli and sea salt; Fried Lobster Tacos with tropical slaw and cilantro aioli; the Local Market Fish Sandwich with arugula, tomato, red onion, and a Cajun remoulade; and signature mixed drinks like the Pineapple Express, with Appleton’s Rum, Myer’s Dark Rum, amaretto, pineapple and orange juices, and grilled pineapple simple syrup.

Cobalt also offers private dining experiences for parties or more intimate occasions in diverse locations throughout the resort, which can accommodate up to one hundred and seventy people and can include fire pits, floor to ceiling windows, or dramatic pergolas.

The Spa offers guests traditional services such as pregnancy, deep tissue, relaxation, and couples massages, as well as hot stone and reflexology massages. Body treatments include the Organic Blueberry Soy Slimming Ritual, which uses organic elements to raise the body’s metabolic rate; the Signature Body Polish, which starts with a full-body sugar scrub followed by a rainfall shower and finishes off with a Swedish massage using a hydrating green tea and lemongrass botanical body butter; and the Sunless Tan Perfection Polish, which uses a refining cream enriched with Vitamin D3, caffeine, and avocado oil followed by the application of an intensive pre-tan hydration solution to prepare your skin for a sunless tan.

The spa offers facials such as the Organic Arctic Berry Peptide Treatment, which uses a blend of arctic berries, lingonberry seed oil, and hibiscus seed extract to address a range of skin issues such as wrinkles, dullness, and age spots; the Signature Organic Facial, which blends massage and specialized, organic skin treatment to soothe sensitive skin, remove excess oil, and brighten hyperpigmentation; and the O2 Oxygen Lift Facial, which utilizes papaya and pineapple enzymes in combination with an effervescent oxygenating mask to exfoliate and refresh skin and diminish signs of aging.

Medi-spa treatments include medical-grade skin peels, Botox, laser hair removal, and Refirme, as well as treatments such Coolsculpting, in which fat cells are frozen and gradually die off; Sublative Rejuvenation (E-Matrix), which uses RF energy technology to treat wrinkles and other skin irregularities; and Photorejuvenation (IPL), which uses intensive pulsed light to treat broken capillaries and age spots.

The spa also offers salon services such as manicures, pedicures, sunless tanning, hair removal, hair styling and coloring, eyebrow treatments, eyelash application, and makeup sessions.

The resort’s catering menu for weddings includes such selections as the Osceola Farm Greens Salad with aged goat cheese, pear tomatoes, and candied pecans served with a Champagne vinaigrette; Ginger Marinated Chicken Skewers; Mushrooms Stuffed with Boursin Cheese; Slow Roasted Prime Rib Au Jus served with horseradish cream; Pan Seared Seasonal Local White Fish with beurre blanc; and the Crispy Chicken Breast and Jumbo Shrimp Duo Plate served with an herb jus and Champagne butter sauce. There are also sweets like hand rolled truffles, chocolate dipped strawberries, blondies, brownies, and an assortment of cookies.

There are dozens of golf courses in the area surrounding Vero Beach Hotel and Spa, including The Club at Pointe West, a uniquely designed course that includes a water feature crossing the eighteenth fairway; Hawk’s Nest, which blends into the natural landscape with its long-needled pines and live oaks; Vero Beach Country Club, a private club founded in 1924; and Sandridge Golf Club, which boasts two eighteen-hole layouts.
