Founded by the late Lee Tebbetts in 2001, Rose & Thistle is a modest, fine dining establishment helmed by Chef-Owner Matthew Gustafson and his culinary team that serves a contemporary menu of classic European cuisine. Using fresh, locally sourced ingredients and regional produce, the team prepares a menu of innovative dishes of fresh seafood, prime dry-aged steaks, and chops, pasta, salads, and sides. The cuisine is accompanied by a carefully selected wine, a variety of seasonal draft beers, and an extensive collection of fine spirits which can be enjoyed in the comfort of the quiet, intimate dining room and bar. The Rose & Thistle is also available for private or semi-private events and functions. The Rose & Thistle is open for dinner only Tuesday through Saturday.
