Tio Flaco’s Tacos first opened in July of the year 2015. The goal of the Mexican restaurant was to bring the street tacos of Mexico to the area of Huntington Beach and Fountain Valley. It was crucial that all of the ingredients used in the eatery’s dishes are fresh, all tortillas are handmade, and every bit of the Carne Asada should be grilled over wood. Caesar Ruiz’s several trips to Mexico served as the inspiration for Tio Flaco’s Tacos. He would go to the country to help build houses and would eat the street tacos in Tijuana during his time there.
