Pizzeria Verità believes in la verità e nell’ impasto, which translates to “the truth is in the dough,” and so the first and foremost distinguishing factor of Pizzeria Verità is its dough. The pizzeria’s famous dough is made from Tipo 00 flour and the topping ingredients feature local ingredients that showcase Pizzeria Verità's commitment to local sourcing. The pizzeria makes its own mozzarella every day, an art Rao learnt from Tom Delia, chef and owner of Trattoria Delia, a popular Italian restaurant in the neighborhood. The short baking time of 60-90 seconds perfectly blends all the flavors together to bring out the unique characteristic of traditional Neopolitan pizza, which is a tasty balance of flavors offering with none of them domineering the others.
The pizzeria's custom-built Neopolitan pizza oven, the Acunto Napoli, was built and shipped all the way from Naples, Italy. This massive masterpiece weighing 6,000 pounds arrived from Italy in May 2012 and doubtlessly took the restaurant's center stage. The oven was set in the middle of the room as this piece of art was too beautiful to be placed at the back of the restaurant. The wood-fired oven burns at 900 degrees Fahrenheit, baking handmade Neopolitan pizzas in 60 to 90 seconds.
Pizzeria Verità is open 7 days a week, Monday to Thursday from 5:00pm to 10:00pm, on Fridays and Saturdays the pizzeria is open from 5:00pm to 11:00pm, and on Sundays it remains open from 5:00pm to 10:00pm.
