The Country Cat Dinner House & Bar is a New American restaurant owned and managed by husband and wife Adam and Jackie Sappington. Adam is a self-learned professional butcher whose fares feature seasonal and locally grown produce. Jackie is one of the city's most popular pastry chefs, renowned for her delicate desserts. The husband-and-wife duo conjure up fresh Southern-inspired cuisine at their dream restaurant, The Country Cat, which was opened in April 2007.

Adam and Jackie Sappington
Adam and Jackiefell in love while they worked at Portland’s Wildwood Restaurant in 1995 and the duo got married in the year 2000. The couple launched a second location of The Country Cat, at Portland International Airport, and also own The Calico Room, a multi-purpose events space just two doors away from their Montavilla's Country Cat. The couple have also debuted their first cookbook Heartlandia: Heritage Recipes from The Country Cat. Adam and Jackie have designed a series of three stylish and functional aprons suitable for the butcher, baker, and bistro chef.
The Country Cat Dinner House & Bar operates 7 days a week and serves brunch and dinner. The restaurant serves dinner every night Sunday through Thursday from 5:00pm to 9:00pm and on Fridays and Saturdays dinner time is from 5:00pm to 10:00pm. Brunch is served every day from 9:00am to 2:00pm.

The Country Cat takes reservations for parties that consist of 4 or more guests. Dine-in reservations can be made via a phone call by calling the restaurant directly. The restaurant also offers online reservations powered by the OpenTable application, available on the restaurant’s website. The restaurant does not accept reservations made via email.
Private events of all types are organized at The Calico Room, located two doors down from The Country Cat. The 1,200-square-foot Calico Room can accommodate 35 guests for a seated event and 60 guests for a standing reception. Food serving options include buffet or family-style.

Broken Cleaver is an online store that features signature apparel for cooks designed by chefs Adam and Jackie themselves. The apparel list includes a butcher apron, baker apron, bistro apron, and men's and women's t-shirt. The online store also offers gift certificates and signed copies of Heartlandia the first cookbook by Adam and Jackie, which features heritage recipes from Portland's The Country Cat.
