The Cochon Cannery began one night in 2014 when Chef Dustie Latiolais discovered a blend of locally gathered ingredients and pork in a consistency ideal for accompanying breakfast, sandwiches, and grilled meats. After perfecting the recipe, the newly discovered Bacon Jam was eventually canned and sold, creating the Cochon Cannery in Breaux Bridge, Louisiana. The unique family-owned and operated business Denise and Dustie Latiolais continue to make Bacon Jam, their flagship product of the Cochon Cannery, along with an entire bacon lineup. They also usually sell their bacon products on Saturdays at the Lafayette Farmers and Artisans Market.
