Located in Manhattan, Kansas, the Tallgrass Tap House is the public brewpub facility of Tallgrass Brewing Company, offering rotating seasonal craft beers and modern American dining fare for lunch and dinner. Avid homebrewers Jeff and Tricia Gill made the decision to enter the craft beer industry in April of 2006 and moved to Kansas to open a public brewery facility for their brand.
The following year, the Gills officially founded the Tallgrass Brewing Company and constructed a brewery facility in Manhattan’s Flint Hills region. In August of 2007, the company brewed their first official beer, an English brown ale named Pub Ale. Since 2007, the brewery has released nearly three dozen craft beer varieties, including seasonal and limited release ales. In 2010, Tallgrass Brewing Company made the decision to bottle their beers exclusively in aluminum cans for environmental conservation reasons. By 2013, the brewery had hit its capacity of 16,000 barrels brewed per year.
In 2015, Tallgrass Brewing Company moved into a new 60,000-square-foot brewery facility, constructed at a cost of $7 million. Located adjacent from the Manhattan Municipal Airport, the brewery is the largest craft brewing facility in the state of Kansas and features an automated 50-barrel brewhouse. As of 2018, the brewery is aiming to hit an annual production capacity of 100,000 barrels and begin distributing nationwide. The company has also opened an 11,000-square-foot public brewpub and taphouse facility in Manhattan’s downtown district.
Today, the Tallgrass Tap House is operated as a public brewpub and taphouse facility, serving modern American fare for lunch and dinner alongside a rotating draft list of Tallgrass Brewing Company craft beer offerings. The brewhouse has twice been named as the Best Beer Bar in the state of Kansas by the Brewers Association and Craftbeer.com. It is open to the public seven days a week for lunch, dinner, and late-night service and offers seating for 210 inside the facility with an additional 50 seats on its rooftop deck.
A variety of modern American fare is served at the brewhouse, including bar-style appetizers, craft burgers and sandwiches, soups and salads, and entrees with international inspiration. Vegetarian, vegan, and health-conscious options are offered, with some standard entrees available with health-conscious substitutions. Cocktails, wines, and desserts are also offered, along with house-made root beer available by the mug or growler. A children’s menu features standard American fare such as cheeseburgers, corn dogs, chicken strips, and macaroni and cheese.
All Tallgrass beers served at the brewhouse are quality-tested at every step of the brewing process, including microbiological and analytical testing throughout the brewing and fermentation process and batch-tracking for all beers distributed to taphouses and stores. Approximately one dozen beers are served at the brewhouse at any given time, including the brewery’s standard year-round offerings and several seasonal or limited release specialty beers. Standard offerings include Buffalo Sweat, a 5% ABV oatmeal cream stout, Velvet Rooster, an 8.5% ABV Belgian-style tripel, Half Pipe, a 5% ABV sour pale ale, and Raspberry Jam, a 4.3% ABV Raspberry Berliner Weisse. Past limited releases have included Spring Blossom Lager, a 4.5% ABV American lager, Pink Ribbon Blonde, a 5% ABV unfiltered blackberry blonde ale, and KBW Amber Ale, a 6.4% ABV American amber ale. While many limited release beers are no longer in production or on tap at the brewpub facility, some may still be available for sale at local Kansas retailers. Beers may be ordered by the pint or as part of several flight options. Happy hour prices are offered on weekday late afternoons and all day on Sundays.
Ongoing Programs and Events
In addition to standard dining and taphouse operation, the Tallgrass Tap House may be rented for private special events, including wedding receptions and business events. Several rental room options are offered, including the restaurant’s Icebox, a 14-person-capacity private room fully equipped with audiovisual capabilities. A mezzanine area may seat up to 30, while a banquet room area may seat up to 50 or accommodate more than 100 standing guests for cocktail-style events. The restaurant’s rooftop patio area may also be rented and may accommodate up to 50 seated guests or more than 75 guests for cocktail-style events. Food and beverage minimum amount requirements are enforced for private rentals and a 5% administrative fee is added to cover operational costs. All reservations must be made in advance and a $100 deposit is required, which may not be refunded in the event of cancellation. For parties renting the brewpub’s Icebox room, standard menu offerings are available. For all other spaces, a special catering menu is offered, featuring a selection of the brewpub’s most popular menu offerings. A catered hors d’oeuvres menu is also available for cocktail-style events.
