Clay Pigeon is an American restaurant that is located in the heart of Fort Worth’s booming Foundry District, just a few minutes away from downtown. This relaxing eatery offers house-made classic American fare and an extensive wine list. The restaurant uses locally sourced, fresh ingredients in its dinner fares focused on traditional and contemporary American cuisine. The restaurant is the brainchild of executive chef and owner Marcus Paslay, who established the Clay Pigeon eatery in 2013.

Chef Marcus Paslay

Born and raised in Arlington, Texas, Chef Marcus Paslay spent most of his time hunting and harvesting. This favorite pastime, which started at a very young age, instilled a deep appreciation for food that then became a lifelong passion. Marcus pursued his passion for food and graduated from the Culinary Institute of America (CIA) in 2006. Soon after graduation, Marcus and his wife Emily moved around as "working tourists," living in six states of America.

Before Clay Pigeon, Marcus's culinary stints included preparing fresh seafood in Alaska, butchering fresh meat and fish in Hawaii, preparing rustic American cuisine in Texas, and creating spectacular, molecular dishes in Seattle, and he also worked as an executive chef in Dallas. Chef Marcus has worked in notable restaurants like Four Seasons and Rough Creek Lodge under award-winning chefs like Chef Gerard Thompson and James Beard award nominee Chef Jason Franny. Clay Pigeon celebrates Chef Marcus’s love for food and his true passion to share his personal preparations with the community.

Restaurant Hours

Clay Pigeon restaurant is open 6 days a week, Monday through Saturday from 4:30pm to 10:00pm. The restaurant remains closed on Sundays.

Dinner Menu

· For The Table - wild mushroom arancini, Italian sausage flatbread, duck confit flatbread, and charcuterie that offers a daily selection of cured meat, cheese, and pickled vegetables

· First Course - fire-roasted bone marrow, baby spinach salad, seasonal soup, bibb salad, and mussels served with leek, fennel, pancetta, garlic, and white wine

· Entrees - chef's selection house-made pasta, chef's selection fresh catch, wood-grilled steak served with whipped potatoes and asparagus, grilled duck breast, and red wine and garlic lamb chop

· Sides - grilled asparagus, manchego cheese couscous, roasted mushrooms, and whipped potatoes

Clay Pigeon's strategic location in the vicinity of downtown makes it a perfect venue for special events of every type, from business dinners to family gatherings. The restaurant’s three private dining rooms can accommodate groups consisting of 12 to 100 people. Clay Pigeon also features a magnificent lit patio that is perfect for gathering for cocktails, appetizers, and after-dinner drinks. The restaurant’s professional events management team can assist with selecting a seasonal menu suited for every occasion and can also suggest perfect wine pairings for the event.
