There are four small casitas and five grand haciendas at The Inn at Dos Brisas. All accommodation is richly decorated, with warm colors, textures, and fabrics, and are designed for privacy amid luxury. Rooms have king beds outfitted in fine Egyptian cotton linens, original artworks gracing the walls, overstuffed leather chairs and sofas to sink into after a busy day, and stone fireplaces to add warmth and elegance to the each room. French doors open onto private patios with lounge chairs, and overlook meadowland scenes and the horse paddocks.

The all-inclusive rate at The Inn at Dos Brisas is a new innovation, and covers everything imaginable. Breakfast, lunch, dinner, and Sunday brunch at the inn’s fine restaurant are included, and diners wishing privacy may request that their meals be delivered to their rooms. Picnickers will love the gourmet lunch baskets that the kitchen provides. Each afternoon guests may join in a wine and cheese reception prior to dinner. All activities and equipment are included. Guests will find a wet bar stocked with non-alcoholic beverages in their rooms, in addition to an assortment of Dos Brisas signature coffees and teas. High speed internet, daily housekeeping, and turn-down service at night also figure in the all-inclusive rate.

There are four casitas at The Inn at Dos Brisas, all four of them in duplex buildings. These rooms are 800 square feet, and offer a private porch, a kitchenette with a microwave, a small fridge, and a coffee maker, a hairdryer, alarm clock, voice mail, a writing desk, and robes and slippers. The high-ceilinged casitas are furnished with brass beds, deep window seats with plenty of cushions for reclining, a leather sofa, and large covered patios. A personal golf cart allows casitas guests ease in touring the inn’s lovely property.

The five haciendas are each 1800 square feet, and look even larger due to their lofty cathedral ceilings. They offer the utmost in luxury, privacy, and comfort. Each hacienda has fine antique furnishings, French Oak floors, gorgeous master bathrooms, and have a half-bathroom in the foyer. Both the bedroom and the living room have fireplaces and flat-screen TVs with DVD players, and the living room has a queen sleeper sofa for guests. A private pool is attached to each hacienda, as is an enclosed porch and pool deck. The master bathroom has an opulent jetted soaking tub, twin sinks, and a bidet, and the shower has a rainfall showerhead. The living room contains deep leather and exquisitely upholstered chairs and sofas, a writing desk, and a dining table with chairs for in-room meals. A dressing room with a large walk-in closet gives guests space to spread out their belongings and to get dressed in a private manner. Guests have the use of an electric golf cart for ease of transportation, and to make exploring the large ranch at Dos Brisas easy and swift. The restaurant at The Inn at Dos Brisas is the only Forbes five-star restaurant in the state of Texas. Its food and ambience will impress any diner. The chef concentrates on farm to table dining, with a menu that is vegetable-centric, wholesome, and unique. Almost all of the produce used at the restaurant comes from the inn’s forty-two acre organic farm, and from its huge greenhouse.

The inn’s farm is entirely organic, free from hormones, pesticides and synthetic fertilizers. It specializes in heirloom varieties of fruits and vegetables, has a large greenhouse to protect against winter chill, and an equally large shadehouse to protect delicate plants from the hot Texas summer sun. The inn’s arable land includes a berry patch, an orchard, and an herb garden, the fruits of which are used in the chef’s fine creations. The inn is moving forwards towards a goal of total self-sufficiency in produce.

The restaurant has an expert sommelier who curates the award-winning 7,000 bottle wine cellar. Stored below in the cool of the cellar are fine international vintages, among which are the very best of French champagnes, white and red wines that represent California’s finest vineyards and the many growing regions of Europe, with a focus on the regional wine estates of Germany and France.

The food of the inn’s restaurant is served in an intimate and sophisticated dining room, which is decorated in the style of a Spanish country manor. Its fireplace is 18th century, and originates in France’s Loire Valley, and its polished bar is handcrafted from mahogany and alder woods. The activity schedule at The Inn at Dos Brisas is one-of-a-kind, and will please all manner of tastes. The equestrian program is what attracts many of the inn’s guests. The inn owns horses suitable for all levels of experience, has the second-largest indoor equestrian arena in Texas, and offers instruction at both the beginner and advanced levels. Guided trail rides through the foothills of Texas hill country are a wonderful way to spend a day, and are geared to all experience levels. Another option is a carriage ride through the property, pulled by the inn’s gentle Clydesdale horse.

The inn offers instruction in clay target shooting, and the equipment required, and is pleased to arrange guided hunting excursions at nearby locations, with game varying by season. Guests may borrow equipment for fishing at one of the inn’s two stocked ponds. Bicycles are available for guests, and the innkeepers suggest an eight-mile journey to the quaint village of Chappell Hill to view its Main Street Historic District, which is on the National Register of Historic Places. Cyclists wishing to stay closer to home might like to explore the quiet roads that encircle the inn’s property.

The inn has added a tennis court, and is pleased to loan rackets and balls to guests who wish to test out their skills. An infinity pool and a wide pool deck is available for guests wishing to swim and sunbathe in the glorious weather of Texas. No equipment is required for walking around the three hundred acre ranch, save for a water bottle and a hat. The rose garden is a particularly nice place for a stroll; it has over 150 different varieties and cultivars of roses, and is fragrant and gorgeous. Self-guided electric golf cart tours of the property are a popular way to spend the day.

After an active day, it is lovely to come back and enjoy a massage in one’s accommodation or on the pool deck. At night, stargazers both amateur and knowledgeable may borrow binoculars from the inn’s front desk and enjoy the stars, constellations, and quiet of outer space. An entirely unique way to spend time at Dos Brisas is to explore the grounds with a metal detector. Civil War bullets and belt buckles have been yielded up by the earth, and there is certainly more treasure to be discovered. Gardeners in the greenhouse or in the outdoor farm are pleased to give informal lessons and pointers about organic gardening.
